11th Alliance Culinary Seminar in CJFCI

From October 14th to October 19th 2019, the Alliance by Institut Paul Bocuse met in Thibodaux, Louisiana USA, for the Alliance Annual Culinary Seminar.

Chef John Folse Culinary Institute, one of the founding members of the Alliance by Institut Paul Bocuse, hosted the 11th edition of the Alliance Culinary Seminar. John Kozar, Hillary Charpentier and a dedicated team of CJFCI faculty staff set up a planning around the main thematic of Sustainability.

The Alliance Culinary Seminar 2019 gathered 15 chefs and instructors from 9 Alliance members. Representatives of Canada, Mexico, Ecuador, Taiwan, Singapore, South Korea, Finland and France attented the event which combined roundtable discussions, workshops, field trips and a conference on #FairKitchen Movement. On Thursday 17, Chef Maxime Moise, Chef Instructor at Institut Paul Bocuse, animated a culinary workshop and presented 3 French recipes using some local ingredients. A good way to show the importance of local products, but also to promote the link between Louisiana and France.

Each fall a one-week seminar for chefs, instructors and faculty staff is hosted by an Alliance member. This yearly meeting gives hosts the opportunity to highlight their cuisine, share their own culture and traditions, as well as transmitting new skills to partners.
